Have you considered taking one or two classes in all of those options, to help you decide? I used that strategy a few years ago. It helped me get a much better idea of not just what would keep my interest or what I might be suited for, but also gave me a valuable inside look at the quality of the programs offered in each area at that school.
Many schools allow you to enroll as 'non-degree seeking', 'undecided' or 'general studies', and you can change it each semester, so it shouldn't be a problem from their end. Unless you are trying to start out at a dedicated trade school maybe.. I don't know much about those.
