Want to eat healthier - but could do with recipe ideas

    Hello so i want to eat healthier after christmas - i don't like the word diet but i do want to eat healthier.

    However im not brillant at cooking so want to start simple so i've made this thread so you lovely people can give me sugguestions for cheap (as im a student) but healthy recipes. Also if possible quick reciepes that don't make me slave away for longer than 45mins to prepare it.

    Also would it be good idea to buy a slow cooker and can you buy them for 1 to 2 people as again im a student so don't need family sized meals.

    I eat meat but not lamb, and not too keen on beef or pork and i cannot eat spicy things anything spicer than a chicken korma makes me ill.

    I like bbq tasting things, also i would rather not have something with lots of garlic in or that smells the house out :p

    I sound very fussy with food haha

    dont worry about the size of the slow cooker, buy any size make up a large batch and freeze the remainder so you have ready meals for the days when you cant be arsed. They are a worthy investment.

    Very cheap student recipe from Cas Clarke's Essential Student Cookbook

    Tomato Provencale and Spaghetti
    Serves 1 - Prep 15 min

    75g spaghetti
    200g can plum tomatoes
    2 tablespoons oil
    2 mushrooms, sliced
    1 clove garlic
    pinch of mixed herbs

    1. Cook the spaghetti in boiling water.
    2. Drain the tomatoes, reserving half the juice, and chop them roughly.
    3. Heat the oil in a pan and fry the tomatoes, mushrooms and garlic.
    4. Add the reserved juice and herbs and simmer until spaghetti is ready.
    5. Drain the spaghetti, pour the sauce over it and serve.

    Will look out for more recipes as I need to eat cheaply and healthily too :)

    Baked Lemon Chicken
    Serves 2 - Prep 5 mins - cooking 25 mins

    4-6 chicken thighs, boned and skinned
    1 tablespoon oil
    juice of 1/2 lemon
    1 tablespoon soy sauce
    1 teaspoon sugar

    1. Preheat the oven to 190 deg. Celsius/375 deg. F/Gas 5.
    2. Put the chicken thighs in a single layer in an ovenproof dish.
    3. Spoon over the oil, lemon juice and soy sauce.
    4. Sprinkle with the sugar.
    5. Cook in the preheated oven for 25 minutes.
    6. Serve hot or cold

    (Serve hot with rice or cold with salad)
