Good morning cafe, so far today been to slimming world, had my hair done, need to get plenty done today...I won't bore you with the details lol! I have only been on these anti psychotics one day and I got an excellent sleep from them and I am relaxed, I cannot complain. Just wish I didn't have to have kicked up a fuss for them to do it.

@Rockclimbinggirl add some pepper and salt and I'll be happy. Cheers :)

@Rockclimbiggirl, could you make some veggie stir-fry minus the tofu...I'll bring seasoned quinoa balls to put in that one. :)

Hey everyone :) sorry Kate I slept in again. I'm not sure about "tofu" I saw some at the grocery store once and wasn't sure what it was, never mind how to cook it. I think I'll just have me cuppa tay to start the day.
It looks nice here outside, sunny and cool good day for walking in the woods with Bella :)

I love tofu! I used to be a vegetarian and ate it all the time.

I've had a kind of easy day so far. My poli sci professor just decided to talk about movies and the film industries of various countries today for some reason. None of the information was too vital. Then I hung out for a while and left my technology class early with the promise that I'd get my work in, but my track record of doing that is not very good. The hardest thing I did today was go to the gym. It was my first time going by myself, and I felt so intimidated I almost left. Managed to complete most of the workout I'd been shown before though. I was sad that I'd just missed a teammate who'd signed out of the gym about 10 minutes before I got there, but we met up at the plaza where we normally hang out along with a few others and some people I didn't know. After a while, they went off somewhere else and I felt too awkward to ask if I was welcome, so I just went to the library. Math class tonight :( Plus I'm hungry.

My life right now is pretty much just a search for people to help me keep my mind of things, even though nobody I hang out with really even knows what's going on with me.

My back is killing me, so I may need to get to the doctor soon. I know Sunday will be hell on my back, as I need to sit upwards of 7 hours straight.

@Freya, I agree about the tofu: Eek. I like quinoa, though. :)

I buy quinoa balls premade by some fancy vegan food manufacturer here. A package has enough for two or three people or two or three meals for one person: Put the whole package of frozen quinoa balls (~ 300 g) into a pot and cover with your favorite chilli sauce (I like spicy but not "super" hot) and set to medium heat. When they begin to heat up, add about 1/2 to 1 cup of grape jelly (depends on how much chilli sauce and how spicy - the grape jelly cuts the spicy heat). Simmer on low for about 10-15 min. Serve on rice along with veggies as a meal, or with toothpicks as appetizers.

If you don't have packaged quinoa balls, there are recipes online. (I like the ease of premade, but this quinoa balls recipe looks good even if it's work.)

Quinoa Meatless Meatballs

Ingredients

1/2 zucchini, chopped
1/2 cup pumpkin or sweet potato, chopped into small pieces
1/2 cup broccoli florets, chopped
1 3/4 cup cooked quinoa
1/2 cup flour
1 egg, lightly beaten (for vegan, use about 1-2 tbsp water, and maybe a bit of oil)

Method

Step 1
Preheat the oven to 200 degrees Celsius and line a baking tray with greaseproof paper. -

Step 2
Steam the zucchini, pumpkin, broccoli for 5-10 minutes or until soft. Mash the steamed vegetables together and set aside to cook slightly. -

Step 3
Place the quinoa and flour in a large bowl and stir to combine. Add the egg and mashed vegetables and stir to combine. -

Step 4
Roll 1 tablespoon of the mixture at a time into small balls and place on the baking tray. Bake for 20 minutes or until cripsy and golden (you can turn the balls after 10 minutes to get a more even colour if you wish).
