Asparagus is wonderful! I didn’t think I liked it until I was in my 30s. Then I discovered how delightful it is!
Many people overcook asparagus — boil or steam it until it’s mush. Then it
is yucky— slimy and ewww. Better bet: clean and trim slim, young asparagus spears, and drop them into just boiled water (enough to cover all the spears), pop the lid on the pot, remove from element, and leave for 5-7 min. Then drain and serve. The spears are cooked to the centre (i.e., hot) but still crisp. If you need to get through the somewhat grassy flavour, add a wee bit of butter, garlic, and a smidge of parm cheese. Or spritz on lemon and sprinkle parm cheese. Or you can do a hollandaise sauce (which I think is a lot of trouble for a relatively mild veggie). Yay National Asparagus Day!
