Good topic. Glad you’re willing to address important issues that don’t get talked about nearly enough.
Are nachos a thing in your country?
Yes, thank god. Don’t get me wrong, I’m not a fan of my country’s imperialistic streak, but the fact that some countries don’t have them (yet) gives me pause sometimes.
Are you a fan or a pass?
What do you think?
If you are a fan, do you make them at home?
I used to. They’re like pizzas, omelettes, and stir frys (3 things I made a lot of when I could cook); versatile, you can be very particular about them, but they’re also good for using up stuff that’s laying around.
If you make them, what's your secret ingredient?
Carnitas. I always end up with about half left over when I order a carnitas plate; the leftovers are great on nachos. But even if all you’ve got are chips, beans and cheese you’ll still end up with something tasty.
Cotija cheese and crema if I was actually
making them rather than just trying to use up leftovers.
People seem to like cilantro on them, but I’m one of those to whom it tastes like soap, so I always left it on the side and never eat it myself.
