Jim’s Cafe - Thursday, February 12, 2026

Good morning @ all =) !

I got up at 5:00 am or so, did a workout at 6:00 am after a tuna sandwich (damn proteins every day :p ! ). So far so good, my weekly appointment soon @ home with a counselor and not much else planned.

It’s going to be a Jim’s Cafe about:

[ New food recipe(s) that you would like to try out somewhere in the upcoming time, for whatever reason! & Let us know what motivated your choice :) ]
Feel free to tag people! I’ll tag @Inastorm @Angie @JMG for opening the last few Jim’s Cafes - Much love to y’all!

And tagging @DouglasW @bubblebear @bobbob for this particular subject, =)

Trying this simple “Eastern” cauliflower dish today ~ I had most of the ingredients at home, but will shop for some of the other stuff I need.

Motivation is … Well, I want to expand my skills in the kitchen and range of what I usually cook/eat. Also I may have a friend over later this month, he usually orders food (so he says). I'll cook for him then!

So on that note trying out this recipe today ( https://brendakookt.nl/recepten/oosterse-bloemkool-met-rijst/ In Dutch language ) :

Thanks for opening @Citizen Insane and tagging me @JMG.

I'll start with motivation. I play D&D with friends almost every Friday night and two of them are vegans. It's tough to find snacks for vegans so I have started researching vegan desserts and snacks. Brownies and cakes haven't come out so well probably because I didn't wait for the flaxseed mixture to thicken well enough. But I will try again. This week they won't be attending so I'll make something non vegan. I have decided I like vegan cooking b/c I never have eggs in the house but b/c I cook for vegans I have THEIR ingredients in my house.
Here's a favorite (spicey pretzels)

Thanks for opening the Cafe @Citizen Insane - what a great Cafe theme. However, I don't have much of a kitchen at the moment and won't be being especially cookery creative for a while (probably about a year or two).
Though one of the first recipes I would like to track down once I have said kitchen is a good olive sourdough bread - motivation is purely from a position of not being able to get hold of good sourdough bread, as I am a sourdough bread snob.

Hello thankyou for the tag. You all are creative with the themes xD
I suck at kitchen , a lot has to do with because I don't have access to proper appliances , and I also prefer comfort so I refrain from cooking lol

But I would wanna bake brownies because they look tasty and feels easier than chocolate chip cookies which I failed 🤦😭

I also want to be able to cook instant noodles. I also wanna try dosa ( a South Indian dish )

Well, I always dreamed of one day making one of my favorites recipes: sfiha (or esfiha here in Brazil).

But I don't have my own kitchen or money.

Another plate that I want to make someday is Semla. It is a swedish dessert.

It looks like a dessert here in Brazil called "sonho", but I think it is a different thing

Thank you for the tag @JMG I like your new kitten avatar.

Here is a Greek pastry I'd like to make called Bougatsa.

Also - on the protein side of meals - I'd like to make Chicken Kiev.

Someday I would like to try making real sourdough bread, but don't have the patience for that right now.

I am pretty much simple meat and potatoes type, but I still do love green vegetables of just about any kind. Like @Angie My family has always loved mincemeat pie, made with meat. After my mom remarried and I ended up with my two nieces, both now in their 40s, they were 6 and 10 asked what the pie was and I told them the ingredients. They claimed it was like eatin' with the Beverly Hillbillies minus the fancy table(pool table) and pot passers(cues). I told them it has: lard, meat from the head, ears and feet, but we don't live in the hills, we are more rightly called rednecks. LOL :)

What a taste opening! i love all the dishes people want to try and make. i may add them to my list.

Thank you for opening @Citizen Insane
Thank you for the tag @Inastorm

i want to try and make quite a few things.
Crepes, Perogies from scratch, choux pastry, learn a better way to make macaroons, multi layer desserts using different sized and shaped molds, ice cream with non animal protein dairy but with the nutrients of such... like pea protein milk, or using avocado. i feel it will be loads less expensive to make it myself.

Motivation.... hmm.... i guess it would be so i can find new bakes to give to people. i truly enjoy baking and feeding people. Food is important to survive. So i enjoy helping other's enjoy the food we have to eat. And the perogies.... that's just because they are so dang delish! If i make them, i can put whatever i want in them. i did that when making pot stickers. i left out what i can't have and added in what i wanted... and mmmmmmm never going back to store bought again!
