I've really taken to making simple, basic meals lately. Some noodles you can just throw boiling water on, or some microwaveable rice, some kind of pre-cooked meat, and some fresh veggies, usually lettuce or leek. Plus some seasoning. I tend to go with thyme, oregano, or Italian garlic seasoning.
Total girl dinner, but pleasant, filling, and really simple to make. Either boil a kettle or throw the rice in the microwave for 90 seconds, then plonk it all together in a bowl.
@Kaya is definitely the cook of us two though, i bet she'd have some really solid ideas she could recommend. She loves talking about nice recipes, and she cooks the food of the gods, it's amazing. ❤️
"Food of the gods" is seriously excessive.
That being said I do have some reccomendations!
What I found to be an excellent meal that requires no oven or stove would be the use of tortilla wraps. One of my favorites would be having tortilla's heated in a microwave, then once done spread some tzatziki on there (hummus also works really well, I use one that has sun-dried tomato in it!), lettuce, tomato, cucumber, feta cheese, olives. But seriously you can just use anything. If you have some leftover meats it'll also pair nicely, I usually use vegetarian shawarma to get my vegetarian meals in.
Basically just make a salad and stick it in a wrap, you can make it as healthy as you'd like.
If you want meat in your meals but not use a stove then pre-cooked or dried meats are a great way to go, personally I make use of dried sausages such as salamis or Spanish fuets to add, they pair very well with pre-grilled red paprika's that you can get in jars (though I'm allergic to paprika these days so no more of that for me!).
Another good option I often fall back on is buying a baguette and either tear it into shreds and dip it into stuff such as aioli, hummus, tzatziki or you can grill it in a toaster (if you have one that it can fit in), then once crunchy, get a clove of garlic, slice it in two and rub it over the toasted bread to taste, a little bit of olive oil, salt and pepper. You can top it with a bunch of different things like a dried italian sausage mix with dice tomato's and basil.
Genuinely bread and tortilla's allow for endless combinations and require no stove or oven time.
And yeah instant noodles are amazing as well! In fact they pair amazing with pickled stuff so if one day you want to do a bit of cooking (not much needed) get some jars and make some pickled stuff, red onions or cucumbers with red peppers make for amazing choices, same goes for eggs! There's so many recipes out there. And they lost for weeks if not months so ideal for days where you don't want to use the stove!
P.S: when doing tortilla's a good quality one is so worth it, also you can freeze and thaw them easily!
Oh and like some others said yoghurt also works wonders with fruits, I prefer to add some nuts, seeds or oats to it for more fibers but that's just preference as with everything else!
