Hi everyone, we were chatting in the forum about food and recipes yesterday... yes food! who'd a thunk it?! :p So here's my veggie sheperd's pie recipe... enjoy!
I'll just include the ingredients and method as I don't measure anything and depends what size pie you're making. Also, I'm very lazy and use frozen veg
Reduce the potato and the cheese if you want a really healthy pie
Or use a sprinkling of Parmesan instead of cheddar as it's much lower in calories.
Ingredients
Vegetable oil for frying
Frozen/fresh onions
Frozen/fresh mixed diced veg (carrot, sweetcorn and pea mix)
Frozen/fresh chopped mixed bell peppers
Frozen/fresh chopped cabbage
Garlic
Mung beans
Quorn mince/soya mince
Tomato puree
Marmite
Gravy granules
All purpose seasoning
Onion powder
Black pepper
Mild curry powder
Chives
Oregano, mixed herbs or both
Frozen/fresh potato
Cheddar cheese
Method
If using dried mung beans, rinse thoroughly in cold water. Boil for about 10 mins in a small pan, then simmer for a further 20 mins or until soft. These will be added to the veggie mince later.
For the veggie mince, use a large cooking pot and fry onions on a medium heat until softened. Add garlic and after a few mins, add the rest of the veg and fry until soft. Use more oil if needed. Add the mince, mung beans, seasoning and herbs to taste. I like a good squeeze (or 3) of tomato puree and a good dollop of marmite. Add some water when needed to keep the mince mix from going too dry – you want to aim for the consistency of a mince meat sheperd's pie. At this stage you can sprinkle in some gravy granules. This is the part where I faff about forever with seasoning to get the flavours right, so just keep adding what's needed until it's to your taste
Pre-heat your oven to a medium heat.
If using frozen mash, microwave first (you'll probably need a whole bag if making a decent sized pie). For a less calorific pie, use can use less mash, but I love my mash!
Transfer your mince mix to an oven dish and place small scoops of mash evenly across the surface. If the potato starts sinking too much, the mince might be a little wet. You can fix this by putting the mince in the oven for 5 – 10 mins to dry it off a bit (learned by experience!). Use a fork to evenly spread the mash out. Grate cheese over the mash... mmm... cheese (I use loads) then pop in the oven until browned.
Eat as it is or cover with yummy gravy... enjoy!
