I'll eat it anyway, because I haven't eaten since last night. I always like pasta, except when it reminds me of that time I had the flu and ate pasta. :P
It works for potatoes, rice, and beans too. IIRC, it cuts the calories by half by converting the starch into an indigestible type which the body treats like fibre. You feel full just the same, and its also "prebiotic" - feeds your healthy gut bacteria.
I just read a strange article about how the bacteria in our gut control our mind through a pathway called the gut-brain axis. Some of these critters make neurotransmitters, directly influencing brain activity โ for better or worse, depending on the bacteria. So now you know, lol!
You can just run the pasta under cold water after cooking it If you cool and reheat more than once, all the better , coz it converts even more of the starch into the indigestible type.
I don't think it's got anything to do with the number of bacteria, unfortunately, but the bad ones like all the sugar/calorie laden unhealthy foods we all love so much. So they're bad for your weight and your gut.
