You're right. However for evaporation, individual particles need to have sufficient kinetic energy so as to transform into the gaseous state. However, some particles will not be able to sustain this high level of kinetic energy, so will revert back to a less energetic dynamic (in this case condense). This will cause temperature gradients which in this case will predominantly lead to a liquid mass of milk. In physics terms, this is about the laws of thermodynamics, specifically relating to what is known as entropy which is a relative description of the degree of disorder within any given system from an energy or kinetic point of view.
